An illusive "light, yet filling" summer time dish. It's so simple, fast, doesn't make a bunch of dishes and easily adjusted to different dietary habits and people. You can fix it up or keep it simple and have it ready no time. John likes a fried egg on top on his. I don't have a microwave, but you can toast your breadcrumbs in there if you like :)

Lemony linguine bowl (serves 2)

2 Tbs panko bread crumbs
2 Tbs olive oil +2 tsp divided
1/4 cup Parmesan cheese, extra for serving
1 tsp grated lemon zest +2 Tbs juice
1 minced garlic clove
1/8 tsp salt/salt for cooking pasta
1/4 tsp pepper
6 oz linguine
3 oz (cups) baby spinach
2 Tbs fresh chopped basil

1) toss panko in 2 Tbs oil and toast on stove until golden brown; set aside to cool
2) whisk Parm, 2 Tbs oil, lemon zest and juice, garlic, 1/8 tsp salt, and pepper together in
small bowl; set aside
3) Bring 2 quarts of water to boil, then add pasta and 1 Tsp salt. Stir often, until tender. Reserve 1/4 cup ...

Morning Phetasy Phamily! My #SoberOctober ended today, many thanks to all of you for the support and encouragement. While I didn't lose the 15 pounds I ideally hoped to lose, I came close at 13.5 with less exercise than I planned but better disciplined fasting & abstaining. 2 More days for those of you running until November the 1st! Happy Friday Phamily!
