Homemade Tater Tots
Nonstick cooking spray
3 strips bacon — cooked (plus 1 strip for garnish)
1 1/2 pounds russet potatoes
1 1/2 tablespoon good quality olive oil
1 1/2 teaspoons flour
1 teaspoons salt
1 teaspoon garlic powder
1/4 teaspoon freshly ground pepper
1/2 cup freshly grated sharp cheddar cheese
3 tablespoons chopped chives
Plain Greek yogurt or sour cream for serving.
Cook bacon and crumble. Preheat oven to 425° F. Scrub and peel the potatoes. Place the potatoes in a pot and cover with water. Bring heat up to medium-high and cook for 5 minutes (the potatoes should be about halfway cooked). Drain Potatoes. Let cool enough to grate. Grate the potatoes into a large bowl. Add the olive oil, flour, salt, garlic powder, and black pepper. Gently combine. Add the bacon, cheese, and chives, then combine again.
