Chasing the perfect, yet accessible, tagine recipe became my obsession this week. After spending an unconscionable amount of time hunting for Moroccan recipes on Pinterest and then the broader internet, it finally dawned on me: if I don't like an ingredient in a recipe, I don't have to add it. Also, if a recipe doesn't call for something I want to use, there's nothing to stop me from using it. So many of the recipes needed to be cooked on a stovetop, but because I'm a silly person, it was crucial to me to be able to cook it in my knock off World Market tagine that can't be used on a stovetop. It eventually occured to me that anything I could cook on a stovetop could probably also go in the oven if I figured out the right temperature and time. So this is what I came up with:
2 T olive oil
2 lbs beef, cubed

2 tsp ras el hanout
1 tsp saffron
1 tsp coriander
1/2 tsp cinnamon
salt and pepper

1 large onion, chopped  
1 can fire roasted tomatoes
8 oz baby carrots
1/2 cup...

The Amazing Randi passed today at a ripe 92 years of age. Here's a smidge of his brilliance on display in a documentary about his unbelievable life. Do yourselves a favor and watch the entire doc. It may be the most interesting doc I've ever seen.
